Marinated Squash Salad

This an often requested recipe.  People remember this dish fondly long after it is served.  That makes me smile because it came from Mary Ed’s kitchen – my Mom’s best friend, my “other mother”  and an awesome cook.

It’s simple to make, but divine in that simplicity. The perfect marriage of the summer vegetables that we have in abundance this time of year, and great flavor combinations. Enjoy!


5 summer squash

1/2 C bell pepper

1/2 C raw onion sliced into rings

1/2 C chopped celery


2 T white wine vinegar

2/3 C cider vinegar

3/4 C sugar

1 tsp. salt

1/3 C oil

1 clove minced garlic


Combine all vegetables.

Prepare marinade and mix well.

Pour marinade over vegetables

Chill for 12 hours stirring occasionally.

Drain before serving.

Serves 10
